Probably just being blind but just upgraded to 3.1 and the delete key isn’t working. It always annoyed me before having zoom and centre model on the delete key as I’d go to max and accidently delete objects when i wanted to zoom…but anyway.
i’ve looked and can’t find it, so what is the shortcut key to centre and zoom extents?

I was annoyed by the same thing, I didn’t even think about it changing key until I read your post, long story short it’s F
or ALT double LMB click outside mesh
Makes more sense than delete

The Delete (or Period) key is now a reserved hotkey for deleting hotkeys. 
You can change the ‘center mesh’ hotkey by assigning what you wish to Transform:Move Edit.
I always felt the delete key was too dangerous of a hotkey anyway
