Is it possible to see half a model, but edit both sides simultaneously? For example, if I wanted to edit the right side of a right foot but the left foot is blocking my perspective from doing so. I tried CTRL + Shift then dragged the green mask to hide the right foot but the edits I do don’t carry over to the left. So I wanted to know if it’s possible to hide one side of a model but edit both sides simultaneously.

Hiding a portion of the mesh is specifically designed to prevent any changes to it.
If you’d prefer to work on only one side of a symmetrical model, then perform your work on it, and use Tool > Geometry> Modify Topology> Mirror and Weld with the relevant axis selected to mirror the changes to the other side. Note that this only works in one direction, so in some cases it may be necessary to first flip the target side to the other side of the axis with Tool > Deformation > Mirror.
If you have multiple subdivision levels, then changes in form but not topology, can be mirrored to the other side with Tool > Deformation> Smart Resym, by masking the side you want to mirror first.
If you have multiple subdivision levels and want to mirror a topological change to the other side, you can freeze subdivision levels, perform a mirror and weld, then unfreeze the subdivision levels to restore the higher level detail for the new topology.
