Edit Quick Menu

Hey guys, does anyone know if it is possible to edit the quick menu (spacebar menu),
Or create a custom (keyboard shortcut) menu that has the same functionality, Basically
I just want a menu where I have to hold the key down.

You can build a custom menu with the items you want. If you assign a hotkey to the menu (Ctrl+Alt+click its name) then it will pop up at the cursor. Note that some items in the Tool palette can’t be used in a custom menu.

That’s what I have already done, but I want it to work exactly like the spacebar menu,
where I would have to hold down a hotkey and it stays in place until I release the hotkey.
With your method you click the hotkey and then 9 times out of 10 zbrush dismisses it immediately
because the cursor goes outside of the menu with pen wobble.

You can increase the value of the Preferences>Interface>UI>Pulldown Border slider. Be sure to store the configuration (Shift+Ctrl+i).
